Built around a 98″ charbroiler, this 16FT Urban Skewers truck turns classic Chinese BBQ into a fast, high-volume street service. Stainless everything, straight aisles, and a guest-facing window with live TV menus—so the fire never slows and the line keeps moving.

🔥 🍢 Grill-First Layout (Why 98″ Matters) 🍡🔥
A skewer concept lives or dies by grill real estate. We centered the kitchen on a 98″ charbroiler under a 9′ extraction hood with a 1/2-HP exhaust fan, giving the crew long, uninterrupted heat zones. The aisle stays clear—no crossover traffic—so one team feeds the fire while another plates and serves. Stainless counters and splash areas make nightly clean-downs fast and repeatable.
Guest Experience: Make It Obvious, Make It Fast
The service side is a stage: a 72″ × 36″ commercial window, a reinforced 120″ shelf for plate-and-pay flow, and a 40″ TV display for live menus and promos. Exterior outlets power POS and signage, while outdoor speakers (client-provided) bring the vibe. The bold wrap does the rest—guests find you before the aroma even hits.
